What’s the perfect way to wind down an evening with family and friends after dinner?  An amazing dessert!  Try this fabulous blackberry custard pie at your next get together.

Here’s the recipe:

  • 1 refrigerated pie crust
  • 1 2/3 cup fresh blackberries
  • 4 tablespoons unsalted butter, softened
  • 2/3 cup whole butter milk
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon fresh orange zest
  • 1/4 teaspoon salt

Preheat oven to 350 degrees.

Roll out pie crust on lightly floured surface, into a 12-inch circle.  Gently place it into a pie plate and press into the bottom and up sides.  Crimp edges as desired.

Place a piece of parchment paper on top of crust and layer pie weights on top.  Bake for 25 minutes.

Remove weights and parchment and let cool on a cooling rack.  Reduce oven to 325 degrees

Place blackberries in a single layer on cooled crust.  In a large bowl whisk together eggs and add butter, buttermilk, and extract.  Butter will still be in lots of small chunks.

In a separate bowl stir together sugar, flour, orange zest, and salt.  Slowly add dry mixture to butter milk mixture, stirring to combine.  Pour batter over blackberries.

Bake 50-60 minutes, until center is set and no longer jiggly.

Garnish pie by sifting powdered sugar over top, and freshly grated orange zesty.

Serve immediately or place in the refrigerator for later.
