Did you know that May is National Asparagus Month?  Fresh from the garden, sautéed asparagus can really enhance the flavor of meats, potatoes or other garden veggies.

Not only are these veggies full of flavor, these little spears are packed with powerful health benefits as well:

  1. They’re loaded with nutrients and a great source of fiber, folate and vitamins A, C, E and K.  I also contains a mineral that helps insulin handle glucose in the body, which is good news if your watching your blood sugar.
  2. Eating asparagus can help fight certain forms of cancer.
  3. They contains a lot of antioxidants which help to slow down the aging process and reduce inflammation.
  4. It’s a brain booster because it is a great source of vitamin B-12.
  5. Asparagus is a natural diuretic so it helps the body release fluid and helps to get rid of excess salt.  This is really great for those individual who have high blood pressure or other heart-related diseases.
  6. They’re also packed with potassium which helps to lower blood pressure and the risk of stroke.

Fun fact about asparagus:  you can actually see asparagus grow if you watch closely.  During warm weather, it can grow up to 7 inches in a single day.
